Hard-boiled eggs keep for about a week in the refrigerator if made properly. Set eggs in a saucepan, cover with water 1 inch above the eggs, and bring the water to a boil on high heat. Remove the pan from the heat, set aside for about 10 minutes, and then immediately cool the eggs in ice water or in the refrigerator.
Soft-boiled eggs have a hard egg white but a soft yolk. Cut the hard-boiling time in half to get soft-boiled eggs.
3. Hard Scrambled
Believe it or not, there is more than one way to scramble eggs. Hard scrambled eggs are cooked all the way through even though they may end up a bit dry.
4. Soft Scrambled
Cook soft scrambled eggs for less time than hard scrambled to retain more moisture. Eggs cook quickly, so add a little milk to keep the whisked mixture from drying out before you finish cooking.
