While there are a few salads we really do love around our house – like this classic broccoli salad, or the fun and funky creamy cilantro corn salad, there’s really nothing better than dessert. It’s hands down our favorite part of the meal. We figured out a way to sneak some dessert into the main course – dress it up as a side dish and call it a “salad!” Okay, so we weren’t the first ones to discover this trick. Crunchy Pecan Grape Salad
We were thinking of dishes to make for an upcoming brunch with friends and really wanted to bring something unexpected and delicious. While hearing the word “salad” typically evokes images of leafy greens, this one is a little different and a great choice for our get-together. Instead of lettuce, the heart of this recipe is actually made up of grapes and pecans, coated in a light and creamy, sweet “dressing” that will have you hooked after the first bite. This is a big ol’ batch of jello, but not just any jello. We used strawberry jello – you could use any red or green jello you want – and stuffed it full of canned pears (which are amazing), cream cheese and frozen whipped topping. Then we blended it all together so that it’s perfectly smooth and poured it into our trusty bundt pan. Once it’s set, you’ve got a gorgeous, epic seafoam salad to get people hooked on.
